Berries!





These are the cupcakes that I sold at the benefit show for Johnny's Memorial Show. They were a big hit. The icing wasn't the best because this was back when I was still learning what to do (and not to do) when it came to icing. The main thing that saved this batch was putting fruit on top. The fruit mixed with the frosting perfectly. I can't wait for summer to come around again. Expect more berries! Many many more berries!

Disaster

These I have named 'Chocolate Cupcakes Disaster.'
This was my troubleshooting lesson with frosting.
Here are some helpful tips that I have learned (from my own damn mistakes!!!)



-BE PATIENT! If you put frosting on your cupcakes before they are completely cooled off, then it will just melt all over and look like garbage (reference photo above). Your cupcake needs to be cooled off everywhere, not just the top. Even the sides and bottom.

-If your frosting seems liquidy in the bowl, it's not going to magically change when you put it on a cupcake. Add more confectioners sugar!!!!! Most recipes I have found for frosting don't ask for as much confectioner's sugar as I find that I usually end up putting in. There's no such thing as too much, seriously!! The thicker the easier to work with/the better!! Dump the whole bag in!!!!

-If the room is too hot then it can also play a role in your frosting melting everywhere. Making frosting in the summer is a bitch. Fun toppers for the summer that are lighter on your stomach, easier to make and just as cute:
*fruits
*jams
*soy whipped cream
*candy

The possibilities are actually endless, that's what is fun about making cupcakes.
